Hello everyone, as another week goes by and like most I went grocery shopping and in this house fruits are a must! even if they are not in season I will get a little bit of every berry possible and create different recipes to indulge my family. So yesterday I made a batch of the most incredible French toast ever, however with the weather here in New England being a bit cold, why not make BAKED FRENCH TOAST? why not!! this delicious recipe is fantastic for the whole family, have it for brunch, heck even for breakfast for dinner nights! The recipe calls for cinnamon raisin bread but I did use regular white gluten-free sliced bread and it still was just as delicious!
Baked Berry French Toast

Ingredients
- 8 extra large eggs
- 1/2 cup sugar
- 1 TBSP Cinnamon powder
- 1 TBSP vanilla extract
- 2 cups of Milk ( I always use Fairlife* lactose free milk)
- 2 TBSP melted butter
- 1 Loaf Sliced bread ( cinnamon, white, Whole wheat)
- 1 pint of Blueberries
- 1 pint of Raspberries
Directions

Step 1
Preheat oven to 350F

Step 2
In a large bowl, whisk eggs, whisk in sugar and vanilla, and Cinnamon mixing until sugar has dissolved.

Whisk in milk and butter until foamy. Completely cover surface of 2 shallow 13 by 9 inch aluminum baking pans. Divide egg mixture between the 2 pans, slowly pouring over top of bread, making sure all bread gets covered. Scatter blueberries and raspberries on top. Bake for 40 minutes. Serve with Maple syrup, whipped cream or powder sugar.
