As many other bloggers/cooks have done in the past research regarding their recipes are a must. So here I am doing the same thing and one thing for sure is that everyone loves to prepare chicken, and for some reason roasted chicken is always a great dish to serve at any time whether for a Sunday meal, when having guest over roasted chicken is enjoyed by everyone, and if you have left overs the wonders of a delicious chicken salad is always welcomed. I have made many roasted chickens in the past lemon roasted, beer infused , apple roasted, etc. but the one that everyone loves is the most simple one is a herb chicken that with the simple use of celery sticks and a small amount of butter the chicken comes out not only delicious but tender and full of flavor. Now please do remember that I use mostly organic products and this includes all meat and chicken recipes on my blog, and like always it does make a difference.
Delightful, Tender Roasted Chicken
A juicy, full of flavor roasted chicken that will become a favorite.
Ingredients
- 3 to 4 lb. organic chicken
- 3 Pearl onions
- 2 cloves of garlic
- 2 Celery sticks
- 2 TBSP butter
- ¼ tsp onion powder
- ¼ tsp. thyme
- Salt and Pepper
Directions
- Step 1 Preheat oven to 350 degrees F
- Step 2 Place chicken in a roasting pan, and season generously inside and out with salt and pepper. Sprinkle inside and out with onion powder and the thyme. Place 1 Tbsp. of butter in the chicken cavity. Arrange dollop of the remaining butter around the chicken’s exterior. Cut the celery into 3 or 4 pieces, with the pearl onions, garlic cloves and place in the chicken cavity.
- Step 3 Bake uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F (82 degrees C). Remove from heat, and baste with melted margarine and drippings. Cover with aluminum foil, and allow to rest about 30 minutes before serving.
