As I sit here like I do many times and think of what to write about on a daily basis, sometimes I have too much to write and have a million recipes to share with all, but like many of us a lot of the recipes are time-consuming and most people do not have all the ingredients available. But creating this dish leaves me satisfied ( which at times is a problem) and makes the gang here asking for seconds, now back to the dish: Many people buy potatoes, however a few years ago when living in Long Island I noticed a new potato called “fingerlings” maybe they are not new but they are for me, it was the best discovery ever! These delicious little potatoes that have the shape of a small banana but the taste is something to write about specially when cooked in broth , onions and garlic then pan seared.
