So I get it, there are many people who for some reason do not like beets… however for us that actually love all types of food I found this delicious salad while visiting a dear friend who knows that I love all types of vegetables, however I am not completely sure where she got the recipe. As you all beet lovers know that the root vegetable is extremely healthy to enhance blood flow, and a very important fact.. they help improve the health of arteries! they even help reduce LDL cholesterol; and when you mix them with oranges the flavor these two combine is an explosion of deliciousness in your mouth!
Roasted Beets with Oranges
A delicious and healthy quick salad
Ingredients
- 8 Assorted beets trimmed
- 1/4 cup Extra virgin Olive oil
- 4 Oranges
- 3 TBSP white wine vinegar
- Chopped fresh chives for topping
Directions
- Step 1 1. Preheat oven to 400 F
- Step 2 2. Place the beets on a large sheet of foil
- Step 3 drizzle with 1 tablespoon olive oil and season with salt and pepper. Fold and crimp the edges of the foil together to form a packet, leaving room for steam to circulate. Transfer the packet to the oven rack and roast until the beets are tender when pierced with a knife, 40 to 45 minutes. Let cool slightly in the foil, then carefully open. Rub off the skins with a paper towel and cut the beets into wedges.
- Step 4 3. Trim the tops and bottoms of the oranges, peel them. Slice into rounds, remove any seeds.
- Step 5 4. Combine the beets & oranges gently toss. Drizzle with the remaining 3 TBSP of olive oil. Season with salt and pepper add chives.
