Best St Louis Ribs ever

 This recipe has been my  own creation, one of my best meals that I have shared with friends and family, ans it is never enough ribs to go around that is how delicious they are and since the weather seems to have forgotten to get war, hey why not have a good reason to turn on your grill or make them in the oven; both ways makes this ribs absolutely delicious! Now I am providing you with the  dry apple rub I have been using for about 7 years, and  along with the rub I also use a marinade that I use in all the pork I prepare; as a rule I always  prepare the rub days ahead of time. The marinade is based with olive oil, herbs, and  pearl onions with garlic cloves. A unique delicious recipe for ribs!!

Ingredients
  • 2 Slabs of St. Louis cut pork ribs
  • Dry Rub:
  • 1 cup crumbled dry apple chips
  • 1 teaspoons black ground pepper
  • 1 teaspoon coriander seeds
  • 1/4 teaspoon paprika
  • 1/4 tsp chili powder
  • 2 tablespoons kosher salt
  • 1 tablespoon sweet paprika
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • Marinate:
  • 1/3 cup olive oil
  • 4 Pearl onions cut in half
  • 4 cloves of garlic sliced thinly
  • 1 tbsp fresh parsley
  • 1/8 tsp fresh chopped thyme ( is ok to use dry )
  • 1 packet of chicken bouillon
  • 1 TBSP apple cider
  • Directions for marinate:
  • in a mortar mix all ingredients and mash until a semi smooth paste is formed, spread all over Ribs.
Directions
  • Step 1 Turn on Oven to 275 F or on the grill turn on one side only to give it indirect heat, make sure it does not get hotter than 300 F
  • Step 2 Rinse ribs thoroughly, pat dry. marinate ribs, and sprinkle the dry rub on both sides of the slab. Cover completely tightly with foil paper. Place in oven for  1 1/2 hours to 2 hours slow cooking  will make the ribs very tender and delicious, open ribs from foil last 25 minutes and  let them brown.
