Sour Cream Chocolate Cake

     Hey everyone 2019 is among us and one thing for sure is that we do have a lot of chocolate lovers out there in the world.  I want to share a delicious moist cake full of flavored that it will be the talk by your friends and family members.  a light and rich texture makes this chocolate cake perfect for everyday and specials occasions.

Delicious , rich, for the chocolate cake lover!!

Ingredients
  • 1/4 cup unsweetened cocoa powder
  • 1/4 Cup boiling water
  • 1 1/4 Cup of sugar
  • 1 Stick of unsalted Butter
  • 1 cup of sour cream
  • 1/1/2 Teaspoon vanilla extract
  • 1 Teaspoon baking powder
  • 2 cups of all-purpose flour
  • 1/2 Teaspoon of kosher salt
  • 5 egg whites
  • For Frosting :
  • 1½ cups butter 3 sticks, softened
  • 1 cup unsweetened cocoa
  • 5 cups confectioners sugar
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon espresso powder * this will make the frosting extremely delicious!
Directions
  • Step 1 For cake
  • Step 2 Preheat oven to 350F Grease and flour two 9 inch round cake pans
  • Step 3 Combine the cocoa powder and boiling water in a bowl and stir until cocoa is completely dissolved.
  • Step 4 Combine the sugar and butter in a large bowl. Beat With electric mixer until light and fluffy. Add the cocoa mixture and mix for 1 – 2 minutes longer. Beat in the sour cream, vanilla and baking soda. Add the flour and salt. Mix for 1 minute more.
  • Step 5 In a separate bowl beat the egg whites until stiff peaks form, 2 to 3 minutes. Fold into batter.
  • Step 6 Spoon the batter into prepared cake pans. Bake until a toothpick inserted in the center of the cake and it comes out clean about 28 minutes. Let Cool completely . Cut each cake into 2 layers for 4 layers total. Spread frosting between layers and over cake.
  • Step 7 Chocolate Frosting:
  • Step 8 Add cocoa to a large bowl or bowl of stand mixer. Whisk through to remove any lumps.
  • Step 9 Cream together butter and cocoa powder until well-combined.
  • Step 10 Add sugar and milk to cocoa mixture by adding 1 cup of sugar followed by about a tablespoon of milk. After each addition has been combined, turn mixer to high-speed for about a minute. Repeat until all sugar and milk have been added.
  • Step 11 Add vanilla extract and espresso powder and combine well.
  • Step 12 If frosting appears too dry, add more milk, a tablespoon at a time until it reaches the right consistency. If it appears to wet and does not hold its form, add more confectioner’s sugar, a tablespoon at a time until it reaches the right consistency.
