Vanilla Cake for the Vegan

Ok so I you all know that one thing I do love to do is bake, and yes we all love the traditional cakes but I can’t look the other way and realize that there is a lot of people who do follow a clean eating lifestyle. I did some research and decided to try to prepare a vegan vanilla cake and guess what? it was moist, light and delicious! I also did try a vegan recipe for the frosting which I did like it however be careful since I did use Earth Balance vegan buttery sticks* and the frosting was creamy, delicious and of course spreadable.  Now be cautious as with any Vegan buttery spread it releases more moisture and it my make the  frosting a bit runny, but no worries just add more powdered sugar to make correct consistency. As always I did let my family try it out and of course hands down they loved it, most likely it is because I am not an over sugar baker,  I am true believer that less is always more; it all comes down to natural flavors added to any dish prepared.

A delicious Moist Vegan Cake that is healthy for everyone!

Ingredients
  • Cake:
  • 2 and 1/2 cups + 2 Tbsp. All Purpose Flour
  • 1 and 1/2 cups White Sugar
  • 1 and 1/2 tsp Baking Soda
  • 3/4 tsp Salt
  • 1 and 1/2 cups Soy Milk or Almond Milk
  • 3 tsp Vanilla Extract
  • 1/2 cup Extra Virgin Olive Oil
  • 1 Tbsp. White Vinegar
  • Vegan Vanilla Frosting:
  • 3 and 3/4 cups Powdered Sugar
  • 3 Tbsp. Vegan Butter
  • 4 Tbsp. Soy Milk or Almond Milk
  • 2 tsp Vanilla Extract
Directions
  • Step 1 For the cake:
  • Step 2 Preheat the oven to 350°F
  • Step 3 Spray a 10×15 half sheet baking sheet with non-stick spray. Set aside.
  • Step 4 Sift the flour into a mixing bowl and add the sugar, baking soda and salt.
  • Step 5 Then add the soy milk or Almond milk, vanilla, oil and vinegar.
  • Step 6 Use a hand whisk to mix in. Be careful not to over mix the batter, just mix until all the large lumps are gone, tiny lumps are fine.
  • Step 7 Pour the batter out into your prepared half sheet baking pan.
  • Step 8 Spread the batter with the back of a spoon so that it reaches the corners of the baking sheet and is evenly distributed across it.
  • Step 9 Place into the oven and bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  • Step 10 Place onto a cooling rack to cool completely.
  • Step 11 Frosting:
  • Step 12 Add the powdered sugar, vegan butter, half the Soy milk or Almond milk and vanilla extract to a mixing bowl.
  • Step 13 Using your electric mixer, start at low-speed, gradually increasing speed. Add the rest of the soy milk or Almond in slowly until perfectly smooth and thick.
  • Step 14 It should be very thick, but still easily spreadable.
