Garlic Shrimp with Basil

Hello everyone, I have a question Who doesn’t like or better yet love garlic?  Well one thing for sure and to be honest I USED to hate it; can you believe that?  Well then one day cooking without Garlic is just boring! So here we are and giving you an absolutely Garlicky, delicious recipe for those who love a delicious and refreshing Shrimp meal!  Now the recipe gets a double punch of Garlic from infused garlic oil and gently cooked in Garlic slices, and it is the perfect amount once you have taste it. Do serve it with a lot of Crust warm Italian bread for polishing off the flavorful juices.

A quick and delicious Shrimp meal

Ingredients
  • 2/3 Cup Extra-Virgin Olive oil
  • 6-8 cloves of peeled Garlic halved lengthwise,
  • 1 1/2 LB Shrimp peeled, deveined, and patted dry
  • 1/3 cup dry white wine
  • 1/4 cup thinly sliced fresh basil
  • 1 TSP finely grated lemon zest
  • 1/8 tsp of kosher salt
  • 1/8 tsp of freshly grounded pepper
Directions
  • Step 1 Heat oven to 425F position a rack to center of oven. In a small skillet place oil and garlic in medium to low heat. Cook, and stir occasionally until the garlic starts turning golden.
  • Step 2 Strain the garlic and oil over a sieve over a bowl
  • Step 3 spread the garlic slices on a paper towel lined plate to drain it. place the shrimp in a gratin or baking dish that is about 7×9 inches. Pour the garlic oil and wine over the shrimp and season with the salt and pepper. Roast, the shrimp stirring once until they are pink, and cooked thoroughly about 8 to 12 minutes. Sprinkle the garlic slices, basil and lemon zest over the shrimp, stir to combine and serve immediately.
