Grilled Pizza with Zucchini & Peppers

Yes Grilled Pizza !! Why because summer is here and grills are meant to cook everything on!  I first saw this recipe on Cooking Network in their shoe “Best thing I ever Ate”  this delicious pizza is a creation from here in New England;  we tried this pizza among others and let me tell you this is one of the best pizzas ever to be prepared at home.

Grilled Pizza with Zucchini & Peppers

A delicious America's favorite food, Pizza made right on your grill!!

Ingredients
  • 1 Small REd Bell Pepper
  • 1 Tbsp. Olive oil
  • 1 Medium Zucchini
  • 4 oz. Mozzarella
  • 1 Lb Pizza dough
  • 1 Cup of Organic Pizza Sauce
  • 1/2 cup Ricotta Cheese
Directions
  • Step 1 Set gas Grill to Medium. Halve and seed the bell pepper, then cut into 6 wedges. toss pepper with the olive oil, salt and pepper. Grill pepper covered for about 7 minutes, until tender, turning over once. Transfer the bell pepper to cutting board and let cool.
  • Step 2 Meanwhile, grate coarsely the Zucchini and Mozzarella. Dice the dough into halves. Stretch dough as thin as possible and shape into 2 rounds. Thinly slice the grilled peppers.
  • Step 3 Place crusts on grill cover and cook for 3 minutes, until bottom are golden brown.
  • Step 4 Turn over, working quickly, top with the pizza sauce and zucchini, then peppers. Dollop ricotta all over top and sprinkle with mozzarella. cover and grill 6 to 10 minutes, until cheese is melted and bottom of crusts are a deep golden brown. Cut up and Serve!!
