So here we are trying to stay absolutely healthy, and going over my favorite recipes that other wonderful cooks have shared on social media, but unfortunately they get lost in the shuffle. Let me share something with all of you as much as I love baking, I cannot and should not be eating any GLUTEN ever, I was diagnosed with advanced Celiac disease about 7 years ago and to be completely honest I was being extremely careful with my Gluten intake. However, I am not a very good patient because my downfall is and always will be anything with gluten. Yes I know that there are other alternatives but I am also allergic to all types of nuts, so no almond flour for me or coconut etc etc. Now with that being said lately I been very sick again, and I really thought it was stress, which is part true; but I tried something new by eating only veggies, some meats and staying gluten-free, and guess what?? I feel alive again full of energy and ready to take on the world again with that being said I made this delicious Quiche created by Carine a food creator in New Zealand, her website is dedicated to clean eating; never knew about her until her recipes started going viral here in America, so in her honor I am sharing her recipe, the difference? I added 2 tablespoons of Feta Cheese and 2 tablespoons of string cheese which in reality is actually mozzarella cheese ( so I believe) I also used no fat Fairlife* Lactose free milk which made it not sweet at all but allowed all the flavor of every ingredient to shine through. I hope you all enjoy it as much as we did.. well my mother in law Mama Lucy and I because the husband refuses to eat anything that has “vegetables” ! A delicious sweet potato crust Quiche, for the healthy in you!!

Ingredients
2 sweet potatoes medium size orange, peeled, finely sliced
1 tablespoon olive oil
2 garlic clove finely chopped
1 medium onion finely chopped
3 cups whole leaves spinach
1/4 teaspoon ground pepper optional
1/2 teaspoon salt
QUICHE EGG BATTER
4 eggs
3/4 cup milk of your choice
1/4 teaspoon ground nutmeg
1/4 cup grated cheddar cheese,
2 Tablespoons of Feta grated cheese
1 tablespoon of shredded low-fat mozzarella cheese
Directions
Step 1Preheat oven to 360 F
Step 2Grease a 9.5 inches round Quiche ceramic dish with butter or oil, Set aside.
Step 3In a frying pan, under medium heat the olive oil.
Step 4Add minced garlic and onion. Fry until fragrant and golden brown. Stir often to avoid the spices to burn.
Step 5Add the spinach cover and reduce to low heat. Cook until the spinach are cooked through, soft and tender – about 15 minutes. Adjust with salt and pepper to your taste.
Step 6Meanwhile peel the sweet potatoes then use a Vegetable Slicer to finely slice the sweet potatoes.
Step 7Arrange the slices on the pan making sure that you cover all the bottom leaving no empty space. For the border, cut in half the sweet potatoes slices to create a ‘flat’ bottom it will hold better and create a beautiful crust border.
Step 8Pre-Bake the sweet potato crust at 360F for 15 minutes. This is optional, you can also add the spinach and egg filling directly and bake your Quiche – make sure you cover the dish with a piece of foil to ensure the Quiche is cooking at the same speed. I prefer to pre-bake the crust to reassure potatoes are cooked thoroughly.
Step 9Spread the cooked spinach all over the pre baked sweet potatoes crust. Set aside.
Step 10In a medium mixing bowl beat the eggs, milk and nutmeg. Adjust with salt and pepper if desired, pour the egg mixture onto the Quiche crust.
Step 11Add grated cheese on the top of the Quiche, if desired. If you follow a Paleo diet, sprinkle almond meal on top instead of cheese, it give a delicious crisp on top.
Step 12Bake for 30 minutes or until the sweet potatoes are soft and the cheese is grilled.
