Delicious, low fat Pasta with Shrimp in cream of tomato in 30 minutes

This delicious recipe is a must, especially now that the holidays are creeping up and everyone will not have time to prepare elaborate meals, this  recipe was shared with me by a sweet and wonderful friend that I have not seen in many months but however we do keep in touch even if it’s just by sharing recipes, gossip and laughs. I had promised all of you quick, healthy recipes, so here you go I hope you enjoys the fact that is only 300 calories per serving and  that it takes only 35 minutes to prepare. Enjoy 🙂

Low Fat Pasta with Shrimp in Tomato cream

A delicious low-fat pasta dish that everyone will love!

Ingredients
  • 8 Ounces Pasta
  • 2 TBSP Extra Virgin olive oil
  • 1 Pound peeled and deveined large shrimp
  • 1 TSP Kosher salt
  • 1/2 tsp fresh ground pepper (divided)
  • 3 Garlic cloves , sliced thinly
  • 3 green onions
  • 1/2 Cup Sauvignon Blanc
  • 1/2 cup low sodium chicken stock
  • 1/2 cup heavy cream
  • 1/2 cup dry packed sun-dried tomatoes
  • 1 TBSP tomato paste
  • 2 Oz feta cheese crumbled
  • 1/4 cup fresh parsley
  • 1/4 cup fresh basil
Directions
  • Step 1 Cook Pasta according to instructions, drain and set aside.
  • Step 2 In Large skillet in a medium – high setting, add oil sprinkle shrimp with 1/2 tsp of salt and 1/4 tsp of pepper. Add to pan, saute for 2 minutes until it they start to turn pink, place shrimp in a separate bowl.
  • Step 3 Add Garlic and the sliced green onions, saute for 2 minutes. Add to shrimp in bowl.
  • Step 4 reduce heat to medium stir in the chicken stock, white wine, cream, tomatoes, and tomato paste. Bring to boil cook for 5 minutes, stir well. increase heat to medium high, add pasta, shrimp mixture, cheese, parsley, basil and the remaining salt and pepper toss to combine.
