Sweet Potato & Onion soup

It doesn’t matter where you are at, soups are and will always be quintessential part of our lives.  I did post this delicious soup before but realized that it got lost in shuffle so here it is again in its glory and hope that you and your family enjoy this recipe as it is one of my favorite soups to make any time of the year. 

Sweet Potato & onion Soup

A delicious creamy soup that it does the body good

Ingredients
  • 2 tablespoons vegetable oil
  • 2 lbs. sweet potatoes, diced
  • 1 carrot, diced
  • 2 onions, sliced
  • 2 garlic cloves, crushed
  • 2 1/2 Cups vegetable stock
  • 1 ¼ Cups Unsweetened orange juice
  • 1 Cup plain yogurt
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper, to taste
Directions
  • Step 1 Heat the vegetable oil in a large saucepan and add the diced sweet potatoes and carrot, sliced onions and garlic.
  • Step 2 Sauté gently for five minutes, stirring frequently.
  • Step 3 Pour in the vegetable stock and orange juice, and bring them to the boil.
  • Step 4 Reduce the heat to a simmer, cover the pan and cook the vegetables for 20 minutes, or until the sweet potato and carrot cubes are tender.
  • Step 5 Transfer the mixture to a food processor or blender in batches, and process for one minute until puree. Return the puree to the rinsed out pan.
  • Step 6 Stir in the natural yogurt and chopped coriander and season to taste. Serve the soup garnished with cilantro sprigs and orange rind.
