Hello once again my fellow food lovers! so I noticed that most of my followers are either in love with desserts or vegetables, so now that summer is in full swing I think it would be great to add some delicious butternut squash into our recipe box, I made these a while back and to my surprise I totally forgot to share it with all of you, this recipe I acquired it from my favorite and only book I have of my dear country Colombia. These butternut squash fritters are legit, in all due respect. They’re crispy, slightly sweet, and full of butternut squash and sage flavor. If you like butternut squash, you will love these fritters. They’re a must!
Butternut Squash Fritters
A healthy and delicious appetizer, snack or side dish
Ingredients
- 5 cups shredded butternut squash
- 2/3 almond flour (or Gluten Free breadcrumbs)
- 2 large eggs, lightly beaten
- 1 1/2 tablespoons minced sage
- 1/4 teaspoon fine grain salt
- 1/8 teaspoon ground black pepper
Directions
- Step 1 Preheat oven to 200°F and place a rack in the middle.
- Step 2 In a large bowl combine shredded butternut squash, almond flour, eggs, sage, salt, and pepper.
- Step 3 Mix well until combined.
- Step 4 Heat two tablespoons of oil in a large heavy frying pan over medium-high heat.
- Step 5 When sizzling scoop 2 heaping tablespoons of mixture into the pan, press them flat with the help of a spatula, and cook until golden-brown, about 3 minutes on each side.
- Step 6 Drain briefly on paper towels to soak up any excess grease, and immediately transfer to an oven proof dish and then into the hot oven until ready to eat.
- Step 7 Repeat to make all fritters.
- Step 8 Serve topped with a dollop of Greek yogurt or sour cream and sprinkle with finely chopped sage.
