Garlic Spinach

Hello to all of you my wonderful foodies, hoping you are all enjoying the warm weather and also enjoying the great vegetables and fruits we can enjoy during the warm weather months.  I know that I have not been here for a very long time, but is not because I didn’t want to, it is because I needed to completely disconnect and deal with my own personal battles: and let me tell you this time away has helped me so much t o focus on me and what I want and need to pursue.  Healthy is not a fad, being healthy means being  a smaller size, or running  tons of miles to get into that perfect bathing suit… no  being healthy begins with your mind a healthy mind creates chemicals that literally enjoy life and love even more, and for me just doing that “keeping a healthy” mind has helped me come back with more passion and love for my cooking blog, for my new Etsy shop  that is helping me to sell some of my creations.  So now that I have given you all a piece of understanding of my absence I want to start with a delicious side dish and extremely easy recipe of one of the best natural, green leafy plants we have. Did you know that Spinach originated in Persia? and that it  is related to beets and quinoa. What’s more, it’s considered very healthy, as it’s loaded with nutrients and antioxidants.  Also Spinach is low in carbs but high in insoluble fiber; this type of fiber may benefit your digestion, spinach is extremely healthy and linked to numerous health benefits, it has been shown to improve oxidative stress, eye health, and blood pressure. But with all the good things that Spinach has to offer like all good things there are many people who should NOT consume it  as part of your everyday  diet. People who are prone to kidney stones may want to avoid spinach. This leafy green is also very high in vitamin K1, which can be a problem for people on blood thinners.

So with all this being said, I came up with an extremely easy recipe and low in calories recipe for the great beneficial vegetable. As always I hope you enjoy it!

Garlic Spinach

A delicious, easy spinach dish that you and your family will love

Ingredients
  • 4 cups of Diced fresh (Baby )Spinach
  • 4 TBSP grated red onions
  • 3 cloves of Garlic diced thinly.
  • 3 Tbsp of Olive Oil
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper
Directions
  • Step 1 Take the fresh Spinach and dice it or if using Baby Spinach leave it whole. Please do Wash the Spinach , I do buy the Organic baby Spinach which is Triple washed.
  • Step 2 Heat oil over med-high heat in a fry pan.
  • Step 3 Add garlic and Onion cook for 2 min
  • Step 4 Add spinach, salt and pepper. Toss the spinach for 1-2 minutes until mostly wilted.
  • Step 5 Remove from heat and serve with any meat if you like here I served it with Teriyaki Chicken Recipe will be available. .
