Green Bean love..

Yes you read that right, in this home the good ol green bean is loved, and since I am writing about Holiday recipes, we all know the same Green bean casserole that has been passed down generation after generation, and we all need to spruce up and make changes in every recipe we come across with.  The first recipe is easy not complicated at all but very tasty made with pearl white onion and fresh garlic.  The second one is a recipe from my family that is about 3 generations old, not complicated made with scallions, fresh diced tomatoes, hard-boiled eggs, and milk, trust me you will like it, if not let me know why and if you have suggestions please do share.

A fresh and healthy way to enjoy green beans

Ingredients
  • 1 LB of Green Beans
  • 2 Cloves of thinly sliced fresh garlic
  • 3 Pearl Onions diced thinly
  • 1 1/2 TBSP of Extra Virgin Oil
  • 1/4 TSP of Kosher Salt
  • 1/8 TSP freshly ground pepper
Directions
  • Step 1 Pre-heat oven to 425 F degrees. Wash green beans, in a bowl toss with the olive oil,salt and pepper. Spread out evenly on parchment lined baking sheet. Roast for 8 minutes, toss beans add thinly sliced garlic and pearl onions and continue roasting and additional 10 minutes or until lightly caramelized and tender.

Creamy Green Bean Casserole

Ingredients
  • 1 Lb Green Beans
  • 2 TBSP extra virgin olive oil
  • 2 Scallions diced thinly
  • 2 TBSP diced tomatoes
  • 1 hard-boiled egg, diced
  • 2 TBSP unsalted butter
  • 1 CUP whole milk
  • 1/3 cup evaporated milk
  • 1/4 teaspoon Pink Himalayan salt
  • 1/8 teaspoon freshly ground pepper
Directions
  • Step 1 Cook fresh green beans, trimmed, in boiling salted water to cover 4 to 6 minutes or to desired degree of done drain. Use immediately, or plunge into ice water to stop the cooking process drain
  • Step 2 Proceed to add olive oil to a deep pot, add the diced scallions, and diced tomato saute for 4 minutes, add the diced hard-boiled egg stir in the milk and the green beans add the salt and pepper add the evaporated milk with the 2 tbsp of the unsalted butter, let this come to a boil once it comes to a boil remove from heat Serve warm
