Pan roasted Fingerling Potatoes

     As I sit here  like I do many times and think of what to write about on a daily basis, sometimes I have too much to write and have a million recipes to share with all, but like many of us a lot of the recipes are time-consuming and  most people do not have all the ingredients available. But creating this dish leaves me satisfied  ( which at times is a problem) and makes the gang here asking for seconds,  now back to the dish: Many people buy potatoes, however a few years ago when living in Long Island I noticed a new potato called “fingerlings” maybe they are not new but they are for me, it was the best discovery ever! These delicious little potatoes that have the shape of a small banana but the taste is something to write about specially  when cooked in broth , onions and garlic then pan seared. With this delicious potato recipe which is easy and absolutely delicious served for any dish

 

Delicious Pan roasted fingerling Potatoes

A quick and delicious recipe for fingerling potatoes great side dish for chicken, meat, or fish.

Ingredients
  • 3 Cups Fingerling Potatoes
  • 1 Cup of water
  • 1 Cup of Broth ( I always use Organic Chicken broth by Swanson)
  • 3 cloves of Garlic cut in halves
  • 3 Pearl Onions
  • 1/2 cup of red Onions sliced thinly
  • 1/4 cup of Canola oil
  • 1/4 Tsp of Kosher salt
  • 1/8 Tsp of fresh ground pepper
  • 3 Tsp of fresh parsley
Directions
  • Step 1 Wash potatoes thoroughly, place potatoes in a heavy non stick  coating pan  (if possible} cover potatoes with the water and the broth, add pearl onions, garlic cloves, and 1/4 of the sliced red onion. Cook for about 30 minutes make sure that the potatoes are tender when pricked with a fork.
  • Step 2 Drain potatoes DO NOT throw out the cooked garlic or onion you cooked them with, add salt and pepper and throw in the rest of the sliced red onions
  • Step 3 Cook in med/high heat gently turning them over to make sure they do not stick to the bottom of pan once you see they are brown on all sides, remove from heat and sprinkle parsley and serve with any meat, chicken, or fish.
