As I go through my recipe notebook, this one about stuff mushrooms was one of the many recipes that slowly made me fall in love with cooking, yes as I mentioned before family has always been a big influence when it comes to creating new dishes or altering them to make those around me happy with delight. A couple of years ago I went to my homeland of Colombia and there spent wonderful times with my beloved cousins and aunts, and this happened to be during the Holidays which for me personally it is the best time of the year especially if you happen to be in Colombia. In Colombia during the holidays there’s a lot of cooking of everything, but that particular year I wanted to introduce my beautiful family with my american traditions and one of them happened to be stuffed mushrooms.. I know they’re common or maybe not, but as requested by one of my beautiful cousins here is to you Marthica. Hope you all enjoy one of my and my cousins favorite appetizers.
Stuffed Mushrooms
Ingredients
- 18 Mushrooms
- 3 TBSP of unsalted butter
- 1/4 chopped onion
- 1 Cup of breadcrumbs
- 1/2 cup diced cooked ham
- 4 TBSP chicken broth
- 1/4 TSP of chopped celery
- 1/4 Tsp of chopped tarragon
- salt and pepper to taste
Directions
- Step 1 Preheat oven to 375 F. Remove and chop the mushroom stems. Saute them with the onion and one tablespoon of the butter for 3 minutes. Add the crumbs, ham, chicken broth, and seasoning. Stuff the mushrooms with this filling and dot the tops with the remaining butter. Bake about 20 minutes or until browned and tender.
