Artichoke & Mushroom Salad with garlic dressing

Talking to a new delightful  friend and hearing her say ” I love the salads you have on your site makes my heart beat faster” made me realize that I must definitely add all my delicious salad recipes, and this one will make anyone’s heart beat a little faster since it is absolutely delicious since it’s vinaigrette  will make you come back for more. Now let me remind you that it will not be ready in 5 minutes since I do cook my artichokes  since I do love cooking the old fashion way; however if you find it that by using pre-cooked artichokes is the way to go, by all means please do it, after all time is precious!! enjoy

Artichoke & Mushroom salad with Garlic dressing

A delicious healthy salad with simple ingredients.

Ingredients
  • 6 Large Artichokes or 14 OZ Canned artichoke hearts, halved or quartered
  • 12 Large Mushrooms
  • 6 TBS of Olive oil
  • 3 TBS white wine vinegar
  • 1 Clove of garlic
  • 1 TBS of Lemon juice
  • Salt and black pepper
Directions
  • Step 1 Trim off the stems and rinse the artichokes in cold water.
  • Step 2 Place them in a large pan of boiling water, cover with lid, and boil until leaf pulls away easily. Remove the artichokes, drain them upside down, and leave them to cool completely.
  • Step 3 Wipe and trim the mushrooms cut them into slices, discarding the stalks. In  a small bowl pour olive oil, add vinegar and peeled crushed garlic, and lemon juice
  • Step 4 season to taste with salt and freshly ground pepper.
  • Step 5 Pull and discard all the leaves and the choke from the base of the artichokes. Set the artichoke bottoms of individual serving plates and arrange the mushroom slices on top
  • Step 6 pour the garlic dressing and enjoy!!!
