For as long as I can remember we have many breakfast dinners, there is nothing written that is “wrong ” so let me share my favorite recipes, I will start with a tropical smoothie, all the way to traditional breakfast from different cultures, deliciousness awaits you and as always : enjoy

Ingredients
- 2 Cups Papaya chunks
- 1 Pint Blueberries, washed and drained
- 1/2 pint raspberries, washed and drained
- 1/2 Cup of grapes
- 1/2 cup Ginger syrup store-bought or make ahead recipe available
Directions
- Step 1 Combine fruits and syrup in large bowl, toss to mix
Ginger syrup
Ingredients
- 1 1/4 cup Water
- 1 cup sugar
- 8 Oz fresh peeled ginger-root, minced in food processor
Directions
- Step 1 Combine water and sugar in a large saucepan and heat to boiling over medium-high heat , stirring until sugar dissolves. Add ginger and keep stirring til boiling, reduce heat and simmer for 5 minutes. Let stand until cool , strain and store in refrigerator.
Huevos Rancheros
a Mexican Classic
Ingredients
- 4 Flour Tortillas
- 2 tbsp unsalted butter
- 4 eggs
- 1/4 cup shredded extra sharp cheddar cheese
- 1/4 cup shredded Monterey Jack cheese
- 1/2 cup bottled organic salsa
- 1 Hass Avocado pitted and Sliced
Directions
- Step 1 Heat tortillas one at a time in a large nonstick skillet over medium heat, heat both sides. Wrap in foil to keep warm.
- Step 2 Melt butter in skillet
- Step 3 fry eggs to desired set 3 minutes or until over hard. Sprinkle with cheeses.
- Step 4 Place tortillas on plates top with eggs, serve with salsa and avocados

French Toast a' la Fabby
full of flavor French Toast that your family will always ask for more
Ingredients
- 6 large eggs
- 2 cups buttermilk
- 1/2 teaspoon ground cinnamon
- Freshly grated nutmeg
- Pinch of salt
- ½ Tsp of Vanilla Extract
- 1/2 cup sugar
- 6 Slices of sliced Italian bread
- Butter or vegetable oil for frying
Directions
- Step 1 Combine eggs, buttermilk, cinnamon, nutmeg, salt, sugar, and Vanilla extract in a medium bowl. Whisk together until thoroughly combined.
- Step 2 Cut bread on an angle into 3/4-inch-thick slices. Dip in egg mixture until soaked through to center. In a large frying pan over medium heat, heat a small amount of butter or vegetable oil. Cook slices in batches until golden brown on both sides. Keep warm in oven on lowest setting until ready to serve. Serve with butter and Warm Berry Compote. – Recipe to follow
Fresh Berry compote
A delicious compote to be used with french toast, waffles or pancakes
Ingredients
- 2 teaspoons unsalted butter
- 1/2 cup sugar
- 2 tablespoons fresh orange juice
- 1/2 pint fresh raspberries
- 1/2 pint fresh blackberries
- 1/2 pint fresh blueberries
- 1 pint fresh strawberries, washed, hulled, and cut in half
Directions
- Step 1 In a medium pan sauté over medium heat, melt butter, add sugar and orange juice
- Step 2 cook until sugar begins to dissolve, about 2 minutes.
- Step 3 Add blueberries and cook until they begin to release juice, about 1 minute. Add raspberries, blackberries, and strawberries and cook until soft and ready to burst, about 3 minutes, depending on ripeness. Shake pan gently or use a rubber spatula to stir carefully don’t crush berries. Serve
Seems that the best thing we have been doing is creating breakfast for dinner just with the excuse of not spending too much time in the kitchen so here you go with another fantastic recipe that we love and forgive me for not placing this one a while a go since it is a favorite! P. s. yes when I made this one we did add some ham, but recipe is called for veggies only.
Frittata Western style
another healthy and savory breakfast for dinner or a great one for Sunday family breakfast
Ingredients
- 6 Large eggs
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1/2 cup chopped sweet red pepper
- 1 garlic clove, minced
- 3 tablespoons olive oil, divided
- 1 small zucchini, cubed
- 4 tbsp. low-fat or fat-free milk
- 4 tbsp. grated Parmesan or Parmigiano Reggiano cheese
- 1/2 teaspoon salt
- Pinch pepper
Directions
- Step 1 Preheat oven to 350 F with rack in center position.
- Step 2 In a large bowl, beat eggs with milk, salt and pepper.
- Step 3 Warm oil in a 10-inch ovenproof skillet or preferably a cast iron skillet over medium heat. Add red and green pepper and onion and sauté until softened, about 7 minutes. Stir in zucchini and sauté until translucent, about 2 minutes. Distribute vegetables evenly in skillet and pour in egg mixture. Sprinkle the egg mixture with the cheese. Cook without stirring until eggs are just beginning to set around the edges, 2 to 3 minutes.
- Step 4 Place skillet in oven. Bake frittata until almost set in center, about 15 minutes. Turn broiler on high
- Step 5 broil frittata until top is golden brown, about 2 minutes, watching carefully to prevent over-browning. Remove from oven. Top with a dollop of Salsa for that extra western style and flavor.
Whole Wheat pancakes with low-fat Buttermilk

Ingredients
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt or NoSalt Original Sodium-Free Salt Alternative
- 1 tablespoon honey
- 3 tablespoons canola oil
- 1 cup buttermilk (I use Organic low-fat buttermilk)
- 2 large eggs
Directions
- Step 1 Stir honey & oil together in a bowl.
- Step 2 Add milk & eggs & beat well.
- Step 3 Mix dry ingredients into the liquids until flour is moistened.
- Step 4 Serve with your choice of fresh fruit.
