Quick and delicious homemade Mac and Cheese

Quick Homemade Mac and Cheese

Nothing like Mac And Cheese for a quick dinner for your family tp enjoy

Ingredients
  • 1/4 cup plus 1 1/12 tsp Kosher salt divided
  • 1 qt milk
  • 6 Tbsp butter, cut into pieces
  • 6 Tbsp all purpose flour
  • 1 Lb pasta such as (cavatappi or rotini)
  • 8 oz package shredded extra sharp cheddar cheese
  • 8 oz package shredded Monterey jack cheese
  • 1 tsp of tabasco sauce
  • 1/2 tsp freshly ground pepper
  • 1 1/2 cups of Panko breadcrumbs
  • 2 tsp olive oil
Directions
  • Step 1 Preheat broiler 9 inches from heat.
  • Step 2 Bring 1/4 cup salt and 4 qt water to a boil in a large covered dutch oven over high heat.
  • Step 3 Meantime, microwave milk in a 1 qt glass measuring cup covered with plastic wrap at high for 3 minutes.
  • Step 4 As milk is heating, melt butter in a 12 inch skillet over medium heat. reduce heat to medium-low add flour and cook whisking constantly for about 2 minutes. Gradually whisk in hot milk , increase heat to medium-high and bring to a low boil.
  • Step 5 Add Pasta to boiling water and cook for 8 minutes
  • Step 6 Meantime, continue to cook sauce for about 6 minutes, whisking often, remove from heat whisk in cheeses, hot sauce, 1 1/12 tsp salt 1/2 tsp pepper
  • Step 7 Stir together the Panko and olive oil
  • Step 8 Drain Pasta and fold into cheese sauce, Sprinkle with Panko mixture.
  • Step 9 Broil for 2 minutes or until breadcrumbs are golden Brown Serve immediately
