Many of you have had many types of egg salad, but none like this one as a matter fact I am sure this will be the only way to enjoy an egg salad, and is not really the eggs that make it so delicious not at all, is actually the herbs, I have made the same dressing for potato salad and please trust me when I say it is the ultimate!! any recipe that I love to share with all of you is because I have kitchen tested it in every way possible. So go on and make it, and if you do not like egg salad then try the dressing in something else, but remember the key to it all is the herbs!!

Egg Salad with green Herbs
Delicious And not your regular egg salad filled with herbs
Ingredients
- 8 Large eggs (I personally love only Organic eggs, trust me it does make a difference)
- 1/4 Cup of finely chopped Parsley
- 1/4 cup Dill
- 1/4 Cup Tarragon
- 1/4 Cup Chives
- 2 Celery stalks, chopped finely
- 1 Small Red Onion, Finely Chopped and soaked in cold water for 5 minutes,
- Pink Himalayan salt to taste
- Freshly ground Pepper to Taste
- 1 TBSP white wine vinegar
- 2 TBSP freshly squeezed lemon juice
- 1/3 Cup plain low-fat yogurt or buttermilk
- 1 TBSP Best Foods Organic Mayonnaise ( I prefer homemade Mayonnaise)
- 1 Garlic clove, chopped finely
- 1 TSP Dijon Mustard
- 2 TBSP extra Virgin olive oil
Directions
- Step 1 1. Hard boil the eggs, place in Saucepan, cover with cold water bring to boil. Cover pan tightly and turn off heat. Let sit for 10 Minutes. fill bowl with ice water, drain eggs and chill immediately in ice water.
- Step 2 2. Combine the chopped eggs with herbs,celery, red onion in large bowl and season to taste with the salt and pepper.
- Step 3 3. whisk together the white wine vinegar, lemon juice, mayonnaise,mustard and olive oil. Toss with Egg mixture
- Step 4 Serve over Arugula or as a Sandwich.. enjoy
