Old Fashioned French Onion Soup

Since I have noticed that my blog about soups has been a favorite one, why not add one more and this time  we will try a favorite to many members of my family.  Did you know that French Onion Soup roots go back to Roman times?  Throughout history, was seen as food for poor people, since onions were plentiful and easy to harvest. The newer version of this soup originates to Les Halles in Paris, France.  Les Halles, was Paris’s central fresh food market. Located in the heart of the city, although it no longer exists, onion soup is permanently associated with that famous market. It is known that the porters kept out the cold of a raw winter by drinking huge mugs of this traditional soup. 

Old Fashioned French Onion Soup

A traditional soup that is good anytime of the year!

Ingredients
  • 1 Lb Sweet onions (like Vidalias)
  • 4-6 Tbsp of unsalted butter
  • 5 cups low sodium Chicken or Beef Stock
  • 1/2 tsp Himalayan pink salt
  • 4 Slices French bread, 1/2 inch thick
  • 1 cup grated Gruyere cheese
Directions
  • Step 1 Peel and thinly slice the onions. Melt 2 tablespoons of the butter in a large saucepan
  • Step 2 add the onions and stir well. Cover with lid and cook over low heat for about 15 minutes, or until onions are translucent. Continue cooking stir onions occasionally, until they’re golden brown. Sit in the chicken or beef stock. Taste carefully for salt , if you feel it has enough do not add extra salt. Cover and simmer soup for 30 minutes.
  • Step 3 Meantime, spread the remaining butter on both sides f each slice of the French bread. Sprinkle half the cheese over one side of the bread slices. Bake the bread on a baking sheet in a preheated oven at 350 F until bread is crisp and the cheese has melted. Arrange the slices of the bread in individual bowls and pour in the hot onion soup.
