Seafood Stew

Here I am updating recipes and this one has been lost in the shuffle and it is too good to be ignored.  This delicious creamy Seafood Stew is quick to cook and perfect for entertaining or as a weekend dinner dish for the whole family. In the coastal regions of South America, the delicious “cazuela” is served in a personal casserole and served as a soup. It is uplifting, full of nutrition and it does not take long to cook so for all you seafood, soup, gumbo lover this recipe is for all of you. Enjoy 

Seafood Stew

A delicious, nutritious meal that comes from the coastal parts of Colombia.

Ingredients
  • 1 1/2 Lbs of Prawns
  • 1 Lb of Tiger Shrimp
  • 1 LB of red snapper fillets cut into chunks
  • 2 LBS of Clams
  • 1 LB of squid
  • 3 Stems of Celery finely chopped
  • 1/2 LB of shredded Carrots
  • 1 Red Pepper diced
  • 1 Green pepper diced
  • 3/4 Cup of Tomato paste
  • 1 Cup of heavy cream or Coconut milk
  • 1 Cup of white cooking wine
  • Creole Sauce:
  • 2 Medium onions, finely chopped
  • 4 Scallions chopped
  • 2 Plum tomatoes grated
  • 1/2 Tsp of thyme
  • 1/4 Tsp of Oregano
  • 2 TBSP olive oil
  • salt and pepper to taste
Take clams and make sure they are washed thoroughly, place a 1 cup of water on a double boiler and steam clams for 5 minutes. Once they are steamed strain the water used on a fine mesh strainer and save water for later use. ;Boil water and stir in the Prawns and the Shrimp cook for 4 minutes, take them out and peel them. Add the shredded carrots, the celery and the chopped green & red peppers and the squid and cook for 15 minutes at a medium setting. At this time start preparing the Creole Sauce : stir fry all ingredients together until you obtain a mild sauce once is prepared add the prawns, shrimp and fish in chunks at this time add the water saved from the steamed clams cook in a low setting for 10 minutes. Add cooking wine stir gently and cook for another 2 minutes. Turn oven on and heat oven to 350F Place the seafood on ovenproof individual casserole dishes add the cream or coconut milk stir and heat for 3 minutes. do not allow it to boil. Serve hot
