Shrimp Avocado Salad

May is here, and with it beautiful weather has finally come to most of us! and most of us will want to have salads as a light dish to be served as the weather get warmer. this delicious salad has been made in our home and never hear a complaint. Now I do understand that there are many people who are allergic to crustacea, and with that being said you can omit the shrimp and add your favorite meat or just simply have this delicious version of avocado salad.

If you’re looking for a simple and healthy dish, this might be the one for you enjoy

Ingredients
  • 1 Head Romaine or Green Leaf Lettuce, chopped
  • 1 pound of shrimp, cooked
  • 1/2 English cucumber, sliced
  • 1 pint grape tomatoes, halved
  • 2 avocados, peeled and diced
  • 1 cup of cooked black beans
  • 1/ 4 cup chopped fresh cilantro
  • Lime juice from 5 limes
  • 3 tablespoons white vinegar
  • Pink Himalayan Salt and pepper to your taste
Directions
  • Step 1 In a large salad bowl equally divide the shrimp, cucumber, avocado, tomatoes and black beans over the lettuce.
  • Step 2 To make the dressing, place the fresh cilantro, lime juice, white vinegar, salt and pepper in a small bowl. Mix well to combine and drizzle over the salad and serve.
